Breakfast- The most important meal of the day!

No Really... It is!  After hearing it from every health related website and through 2 Nutritionists, I guess I'll believe it. I don't want to... But I will.
I hate breakfast. I hate getting up early to make it, then eat it, then clean up BLAH.


But, the truth of it is, eating a healthy and hearty breakfast will jump start my metabolism and keep me from mindlessly snacking later in the day ( that's what the doctors say anyway ). More imporantly then eating it, is eating the right thing. Mucho fiber and protein early in the morning will accomplish the above. Sugars and carbo loading will leave you craving more.

So I hate eggs... A lot... But they are one of the best breakfast options, So I am going on a Frittata Journey.
I decided I would make ahead mini Fritattas in Muffin Cups. Here's what I did;


SPINACH PIE FRITTATA
3/4 Cup Egg Substitute
1/2 Cup Frozen Spinach, Thawed
1/4 Cup Chopped Onion
1/4 Cup Crumbled Feta Cheese
Combine all, pour into muffin tin, sprayed with PAM, bake at 350 for 25 min. Makes 4.
My oven is a little crazy, it actually took me 35 min of cooking but, I cooked 12 at a time, and again, my oven is crazy.
Each:  58 Calories 2 Fat 8 Cholestoral 206 Sodium 3 Carb 1 Fiber 7 Protein

Spinach, or any dark leafy green, is very good for cancer prevention and a good source of antioxidents as well as several vitamins we don't get many other places.

----- So I got some protein, now I need some fiber. I stared at the bread isle looking for something with some significant fiber that I could eat with my yucky egg concoction. I went with Thomas Light Multi-Grain english muffins, which I couldn't possibly eat plain, so I found Polaner Grape Jelly with Fiber.
I'm still on the fence with the jelly, while its "fiber" ingredient Malodextrin is "Naturally Derived" it is still processed. It hasn't been linked with any harmful affects, but is still technically artificial.

So here's what breakfast looks like;

2 Frittatas with 1 English Muffin + 1 Tbs of Grape Jelly
246 Calories 5 Fat 16 Cholesterol 572 Sodium 41 Carbs 7 Sugar 13 Fiber 19 Protein

----- Dr's this week told me you should get at least 35 grams of fiber per day. And I have always aimed for 100 grams of protein per day. Both of these items increase your metabolism and keep you feeling fuller longer.

THE NICOLE FRITTATA
3/4 Cup Egg Substitute
8 Slices Ham ( I only use Hormel Natural Choice, No Nitrates )
1/2 Green Pepper Chopped
1/4 Cup Onion Chopped
1/4 Cup Shredded Mozzarella Cheese
*Same Preparation as above
76 Calories 2.5 Fat 13 Cholestoral 336 Sodium 3 carbs .5 Fiber 9 Protein

SOUTHWEST FRITTATA
3/4 Cup Egg Substitute
1/2 Red Bell Pepper Chopped
1/8 Cup Olives Chopped (whichever you like)
2-3 Tbls Salsa
1/4 C Shredded Mozzarella Cheese
* Same Preparation as above
